Blueberry Muffins with a Tall Bakery-Style Dome

These blueberry muffins bake up with a genuinely tall dome, a crumb that stays soft for days, and a crisp cinnamon sugar crust on top. The batter uses full-fat yogurt and a two-temperature bake to get results that most single-heat recipes don't.

Ingredients
  

For the Muffin Batter
  • 2 cups (250g) ​ all-purpose flour, plus 1 tbsp reserved for coating ​
  • 2 tsp baking powder ​
  • 1/2 tsp baking soda ​
  • 1/2 tsp fine salt ​
  • 3/4 cup (150g) ​ granulated sugar ​
  • 2 large eggs, room temperature ​
  • 1/2 cup (120ml) ​ neutral oil (sunflower or canola) ​
  • 1 cup (240g) ​ full-fat plain yogurt, room temperature ​
  • 2 tsp pure vanilla extract ​
  • 1 tsp lemon zest (about 1 lemon) ​
  • 1 1/2 cups (225g) ​ fresh or frozen blueberries ​
For the Cinnamon Sugar Topping
  • 3 tbsp granulated sugar ​
  • 1/2 tsp ground cinnamon ​

Method
 

  1. Preheat oven to 220°C (425°F). Line a standard 12-cup muffin tin with paper liners or grease each cup well.
  2. Whisk flour, baking powder, baking soda, and salt together in a large bowl.
  3. In a separate bowl, whisk sugar, eggs, oil, yogurt, vanilla extract, and lemon zest until smooth.
  4. Pour the wet mixture into the dry ingredients. Fold with a rubber spatula until just combined and no dry flour remains. Batter will be thick and lumpy — do not smooth it.
  5. Toss blueberries with the reserved 1 tbsp flour. Fold into the batter with 3 to 4 strokes of the spatula.
  6. Divide batter among the 12 cups, filling each 3/4 full.
  7. Mix cinnamon and sugar together. Sprinkle evenly over each cup.
  8. Bake at 220°C (425°F) for 5 minutes. Without opening the oven door, reduce temperature to 180°C (350°F) and bake for a further 17 minutes. Muffins are done when the tops are golden and a toothpick inserted in the center comes out clean. Internal temperature: 93°C to 96°C (200°F to 205°F).
  9. Cool in the tin for 10 minutes, then transfer to a wire rack.
