Cowboy Caviar

A no-cook dip and salad hybrid made with black-eyed peas, black beans, sweet corn, and a tangy lime dressing. Cowboy caviar takes 15 minutes of active prep and gets noticeably better after 30 minutes of marinating in the fridge.

Ingredients
  

For the Salad
  • 1 can (400 g / 15 oz) black-eyed peas, drained and rinsed ​
  • 1 can (400 g / 15 oz) black beans, drained and rinsed ​
  • 1 cup frozen corn, thawed (or 1 can drained canned corn) ​
  • 1 cup cherry tomatoes, quartered ​
  • 1 ​ red bell pepper, finely diced ​
  • 1 ​ green bell pepper, finely diced ​
  • 1/2 medium red onion, finely diced ​
  • 1 to 2 ​ jalapeños, seeded and finely minced ​
  • 1/2 cup fresh cilantro leaves, roughly chopped ​
For the Dressing
  • 3 tbsp olive oil ​
  • 3 tbsp apple cider vinegar ​
  • 2 tbsp fresh lime juice (about 1 large lime) ​
  • 1 tsp honey ​
  • 1 tsp ground cumin ​
  • 1/2 tsp garlic powder ​
  • 1/2 tsp fine salt, plus more to taste ​
  • 1/4 tsp black pepper ​
  • Pinch of ​ cayenne pepper, optional ​

Method
 

  1. Pour both cans of beans and the canned corn (if using) into a colander. Rinse under cold running water for 30 seconds and shake well until no excess water drips from the bottom.
  2. Dice the red bell pepper, green bell pepper, red onion, and jalapeños into 1/2-inch pieces. Quarter the cherry tomatoes.
  3. Add the olive oil, apple cider vinegar, lime juice, honey, cumin, garlic powder, salt, pepper, and cayenne to a small bowl or jar. Whisk or shake until the dressing looks cohesive and slightly thickened.
  4. Combine the drained beans, corn, tomatoes, bell peppers, onion, jalapeño, and cilantro in a large bowl. Pour the dressing over the top and toss until everything is evenly coated.
  5. Cover the bowl and refrigerate for a minimum of 30 minutes. The dressing should be absorbed into the beans and the vegetables should look slightly softened.
  6. Stir, taste, and adjust with more salt, lime juice, or cayenne as needed.
  7. If adding avocado, dice one ripe avocado into 1/2-inch pieces and fold in gently right before serving.
